Meet Mixologist Extraordinaire Jason Wiles
Whether attributable to his film degree from American University or something more intrinsic, one thing is certain about Jason Wiles: the Poste head bartender has a flair for the dramatic. Where others would be content to stick to the basics, Wiles goes above and beyond to create something more narrative and less traditional. It's apparent in everything from how he names his cocktails (such as the In the Lime of Fire and Tarragon in 60 Seconds, just to name a few) to the way in which he serves them - Wiles is the mastermind behind Poste's famous weekend bloody mary bar and the seasonal hot cocktail bar in the courtyard garden. Wiles joined the Poste team in 2009 after learning the basics at Clyde's Restaurant Group and studying the art of the craft cocktail with Scott Baird and Josh Harris at Againn. Since succeeding mixologist Rico Wisner as Poste's head bartender in 2011, Wiles has been perfecting his art with housemade bitters and infusions - incorporating seasonal herbs and produce from the courtyard garden whenever possible - in the bar's classic and "Poste-Prohibition" cocktails.
